The action of Carra™Sol BPP 6215 favors the formation of a three-dimensional network that helps the retention of air during the fermentation process allowing to reach a greater volume. Also, both products provide a soft, spongy texture with sufficient elasticity to ensure a well-defined slice. Finally, the excellent water retention properties of Carra™Sol BPP 6215 and GelyFiber FHM 200 ensure a feeling of freshness throughout the life of the product.
